Nope, I peel and cut my own and actually use a frying pan with a little bit of oil - just as good, if not better and use paprika for seasoning - purrrrfect!

That's sort of the way I do them.
I stick the heat on full whack but put the chips in before the oil is screaming hot, then just let the chips gradually warm in the oil before they get sizzling.
Good drainage and salt is key, when you take them out.

Was in Birmingham last weekend, and had a meal at the Premier Inn. Had some of their 'triple cooked' chips which were surprisingly nice. Myself, I still have home made chips, with oil, as the missus wont put up with lard/dripping, (and it takes ages for the dripping to taste 'right'). Probably have home made chips once every couple of weeks, lots of salt and vinegar. Sometimes have fritters instead, and occassionaly with batter on them, (when the oil is coming to the end of its useful life).

Triple cooked chips! They were invented by Heston Blumenthal,the pretentious git. Oh yes,the first thing I think of doing when the chips are done is putting them in the freezer to get rid of the excess moisture,then cooking them again. The man is a danger to all right thinking people.

I was mad enough to try it once since I like chips just as much as everyone else. I also tried a Heston recipe for bolognese and it was crap. Definitely a chef to avoid if you like cooking your own stuff.

The man makes biscuits out of crabs! He tried to cook an octopus once,but he gave up after 9 hours. It kept turning off the gas.
