My Mum always makes her own chips and they are the best! I know she uses King Edward or Maris Piper spuds and she does use a deep fat fryer. I really don't think you can beat chips cooked this way.

I have been enduring oven chips and fries for a while but I finally had enough and persuaded my other half that we should have some proper chips.
We used Maris Piper potatoes. Soaked them to get the starch out, cooked them at 140 until they were soft, let them get cold then cooked them at 190 for a couple of minutes. Best chips I've had in a long time!
Perfect accompaniment to steak and petit pois a la Francaise.
