I was allowed to cook tonight. I don't know what it is,but when I've put the flames out I'll hazard a guess. I'm in the dog house.

Before I went out tonight I made some spicy lamb "burritos". Had a couple for tea and then had another when I got back from the pub (perfect!) They're more burrito style than genuine burritos but they are v tasty.
Takes about 10 minutes prep (5 if you're quick like me) 10 to cook, another 5 to assemble and back in the oven for 5 or 10.
Saute sliced onions, lamb mince, "veg" (I threw in some peppers and celery but go with what you've got) garlic, ground cumin, chilli (Scotch Bonnets are dead easy to grow) and something smoky eg smoked paprika or a dribble of chipotle. Season well (salt and pepper FFS!) Until cooked. This is the basic filling but obviously you can experiment.
Oil a 2" deep tray.
Fill wraps and grate a hefty cheese e.g. strong cheddar on it before rolling.
Line up the wraps side by side in the baking tray.
Bake in medium oven for 5 mins until the wraps are crispy.
Usually they are still soggy underneath which some folk like but I turn them over and put back in the oven for another 5 as I like 'em crispy.
Just great.
